Autumn Pickle Brine

8 each juniper berry

5 t star anise

¼ t nutmeg grated

1 bay leaf

4 oz sugar

3 oz salt

5 each allspice

11 each clove

8 oz red wine vin

12 oz water

Purchasing and Prep

Combine all ingredients in medium sauce pot, place over medium heat and bring to simmer.

Strain in to a bane, place over ice to cool. Label, date, refrigerate.
